Mercy Rockford Health System issued the following announcement on Nov. 19.
As you start planning your Thanksgiving dinner this Thursday, Mercyhealth’s diabetes educators asks you to remember that more than 110 million Americans have the disease, are at risk for it, or care for someone with diabetes.
“There are some simple ways to recreate classic Thanksgiving recipes to make them healthier for someone with or at risk for diabetes,” said Elise Remsen, diabetes education program coordinator at Mercyhealth.
On Monday, November 19, at 11 am, inside Café 2400 at Mercyhealth’s Rockton Campus, 2400 N. Rockton Ave., Mercyhealth dietitians and culinary services team held a cooking demonstration of three healthy Thanksgiving dinner recipes. Those were Fennel and Orange Salad with Toasted Pistachios, Fresh Green Bean Casserole and Cauliflower Mashed “Potatoes.”
